Skillet Serves Up Saturdays: Cedar Smoked Trout, Thom Kha Soup, Bacon Jam & More

Everyone’s talking about Skillet Street Food and how delish it all is, so we thought we’d give you a preview of what the peeps in the Airstream are cooking up for this weekend’s lunch:

  • the burger, grilled grass fed washington beef, cambazola, bacon jam, arugula, brioche, handcut french fries
  • cedar smoked trout, sauce gribiche, roasted fingerling potato salad, dill, red onion, roasted baby golden beets
  • italian style panini, with arugula, apples, locally made culatello, french country bread, chimichurri style vinaigrette
  • thom kha soup, garlic shoots, straw mushrooms, rice
  • poutine with cheddars, gravy and herbs
  • poutine with fontina cheese sauce, and caramelized onions
  • rhubarb upside down cake, compote, creme fraiche
  • cucumber mint and lime fresca

Any serious foodies out there? Then please define these words for everyone:

* cambazola
* brioche
* sauce gribiche
* culatello
* compote
* chimichurri
* thom kha
* poutine
* creme fraiche
* fresca

Poutine?

The Canadians are coming , The Canadians are coming!
Just kidding, I’m stuck between the burger and the Trout.

*Cambazola – Cow’s milk cheese
*Brioche – A light flaky, sweet french bread
*Sauce gribiche-emulsified egg yolks,pickles,capers,parsley,chervil, and tarragon with julienned hard boiled egg whites.
*Culatello-Kind of like prosciutto but I won’t go into how it is made(might scare some people)

Sorry, have to get to work, can’t finish the list (doesn’t anyone cook around here?)

Thanks for asking Trellis, there were quite a few I wondered about myself. Ones I know:

brioche – french egg bread, rich, soft, like challah but a different shape
compote – stewed fruit sauce with small pieces
thom kha – spicy vietnamese coconut milk soup, savory with lemongrass, mushrooms, vegies, chicken or tofu
poutine – disgusting French Canadian french fry dish with gravy and cheese curds (although my Montreal husband assures me it can be good)
creme fraiche – light sour cream sauce

Is thom kha Vietnamese or Thai/Lao?
Very good in either case. VERY good.

Trellis: please! I took you for more of a sophisticate..

It looks like chimichurri is the only one missing now. It’s a spicy, parsley and garlic and olive oil dipping sauce; perfect for grilled meat.
